Instant Pot: Cinco de Mayo Must Haves!

Print
Cinco de Mayo is just around the corner - what delicious way will you be celebrating with? If you're looking for some Mexican inspired fare to prepare for the fiesta, I got you covered! Here are some of my favorite dishes perfect for the Cinco de Mayo celebration....

Instant Pot Cilantro Lime Chicken Tacos

It's everything I love about chicken enchiladas all in a bowl! Boneless, skinless chicken breast slowly simmers in a soup of enchilada sauce, chicken broth and milk. Joining in the mix are kidney beans, tomatoes, sweet corn, onions and bell pepper. This is a hearty soup of a Mexican favorite dish!

Instant Pot: Caldo de Res (Mexican Beef Soup)

The soup eats like a meal with a hearty bowl full of beef, corn, potatoes. baby carrots and a healthy dose of fresh cilantro and lime juice.

Instant Pot: Chile Con Carne

Big, bold flavors, lots of meat (no beans here!) and a slew of toppings for garnish is how we're doing it. The best part of it all is that it will be on the table in 15 minutes or less!

Instant Pot & Slow Cooker: Spicy Mexican Pork & Rice

This Spicy Mexican Pork & Rice recipes is one of my favorites because of the way rice cooks with the pork and seasonings. I especially like this more the next day when flavors have been given a chance to meld...

Instant Pot: Pork Barbacoa

The recipe involves pressure cooking a pork roast with water, cumin, brown sugar, salsa and a bottle of cola. It seems like an odd combination but it definitely does bring out a nice sweet and spicy flavor!

Instant Pot: Chipotle Lime Carnitas

For these Chipotle Lime Carnitas, I let my Instant Pot do all the work of gently pressure cooking pork with the flavors of tangy fresh lime and smoky chipotle peppers. The result is a wonderful filling for tacos, burritos, enchiladas and more...

Instant Pot: Chicken Enchilada Soup

It's everything I love about chicken enchiladas all in a bowl! Boneless, skinless chicken breast slowly simmers in a soup of enchilada sauce, chicken broth and milk. Joining in the mix are kidney beans, tomatoes, sweet corn, onions and bell pepper. This is a hearty soup of a Mexican favorite dish!
