Sweltering heat prevented me from making much of an effort for dinner. As a result, tonight we had a simple green salad with feta and roasted garlic ranch chicken.
Here’s my recipe for roasted garlic ranch chicken:
1 head of garlic roasted (or 4 cloves minced)
1 cup ranch dressing
1 tablespoon chopped fresh basil
6 drumsticks (or preferred cut of chicken)
flour for dredging
cooking oil
salt, pepper & garlic powder to taste
Combine first three ingredients to form marinade.
Season chicken with salt, pepper & garlic powder.
Place chicken in ziploc bag with marinade.
Allow chicken to marinate for at least an hour.
When ready to cook, heat oil in pan.
Preheat oven to 350 degrees
Dredge chicken in flour and place in pan.
Brown on all sides.
Place in 350 degree oven.
Bake until juices run clear or about 20 minutes.
Oh that chicken looks like it would be so delicious!

That looks amazing, I’ve gotta start branching out from boneless skinless chicken breasts. The drumsticks are making me drool!
Made it tonight, it was amazing! And actually pretty easy. I had to bake it closer to 25 minutes, but that could be my oven (temp might be off or something). I also used minced garlic because I was short on time, and that worked well, too 🙂 Thanks for the great recipe!
