Ravioli with Attitude!

A while back, I made a slew of homemade ravioli using leftover ingredients I didn’t have the heart to throw away. Well, I couldn’t have been more ingenious because tonight was one of those nights where I wanted something quick, light and super easy. So what’s for dinner? Chicken Ravioli with a citrus butter sauce!dsc00023-6511875My ravioli was filled with chicken, spinach, chopped grape tomatoes, basil and feta cheese. After boiling them, I cooked them up in my saute pan in a citrus butter sauce until they crisped up and browned perfectly. The citrus butter sauce was nothing more than a few tablespoons of butter, a little lemon juice and a sprinkle of a citrus herb seasoning blend.dsc00033-6770219The result was a beautiful plate of ravioli that was crispy & browned on the outside and full of flavor on the inside.
