1/4 cup fresh mint leaves, finely chopped
20 small/medium sized figs
1/4 cup honey
In a bowl, combine chopped mint leaves and crumbled feta; Toss.
Slice an “X” at the narrow top of each fig and push open slightly.
Fill each fig with the mint feta mixture.
Plate on serving platter.
Heat honey in the microwave for 5-10 seconds.
Drizzle warm honey over each mint feta stuffed fig.
