Spring salad with blue cheese, cranberries,
pears, walnuts & cherry balsamic dressing

Spring mix greens

1-2 oz blue cheese, crumbled
1/2 cup dried cranberries
3 pears, sliced and soaked in lemon water
1/4 cup toasted chopped walnuts

Combine ingredients for salad.

Cherry balsamic dressing:

1/4 cup balsamic vinegar

1/4 olive oil
1/4 cup cherry jelly or jam

Melt cherry jelly/jam in the microwave.
Combine vinegar and melted jelly/jam; whisk together.
Slowly whisk in olive oil to create dressing.
