“Custom” cookie base recipe

“Custom” cookie base

Here is the recipe I made in advance where everyone added their choice of various cookie “mix-ins.” For the cookies I made today, I mixed in holiday colored white chocolate chips and chopped macadamia nuts.

joanpics006-6209996 1 cup butter, softened

1 cup white sugar

1 cup brown sugar

2 eggs
1 teaspoon vanilla
1 teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

2 cups AP flour
2.5 cups processed oatmeal – this is oatmeal that has been processed in a food processor until it becomes a powder

Cream butter and sugars in stand mixer.

Add eggs one at a time.
Add vanilla.
Add combined dry ingredients in a separate bowl.

Slowly add the dry ingredients to the egg/sugar mixture.
Dough will the very thick and dense.
Add in your choice of mix ins.

Preheat oven to 350.
Line cookie sheet with parchment paper (optional).
Using a cookie scoop, drop balls of dough onto lined cookie sheet.
You could also hand roll the dough into small golf ball sized balls.
Bake in a preheated oven for 8-10 minutes.

Cool on wire rack.
