Italian Sausage & Pasta Minestrone Soup

This recipe was made for my 2007 Holiday Party featuring an Italian inspired menu. You can read about it and view the additional recipes I made for this event HERE.

Italian Sausage & Pasta Minestrone Soup
1 chub pork sausage
1 tablespoon italian seasoning
3 cloves minced garlic
1 onion, chopped
1/4 cup sugar
2 potatoes, finely diced
1 bag frozen italian vegetables
1/4 cup finely diced proscuitto
2 cups homemade or jarred marinara sauce
2-3 cups beef broth
1 cup small ring pasta

Brown sausage in pan with seasoning.
Add minced garlic and onion.
Cook until onion is softened.
Place mixture in crockpot.
Add remaining ingredients, except pasta to crockpot.
Cook on low for 4 hours.
Add pasta in last hour of cooking.
