Parmesan Artichoke Orzo

This recipe was made for my 2007 Holiday Party featuring an Italian inspired menu. You can read about it and view the additional recipes I made for this event HERE.

Parmesan Artichoke Orzo

1 1/2 pkgs dried orzo

1 pkg frozen artichoke (from Trader Joes)
3 cloves garlic, minced
1 large onion, chopped
1 small wedge of parmesano reggiano cheese

Boil orzo according to directions; drain.
In a skillet, saute garlic, onion and artichoke in butter.
Finely grate cheese and set aside.
Add cooked orzo to garlic, onion, artichoke mixture.
Fold in grated cheese.
