Roasted Mixed Vegetables

This recipe was made for my 2007 Holiday Party featuring an Italian inspired menu. You can read about it and view the additional recipes I made for this event HERE.

Roasted Mixed Vegetables
2 zucchini
2 yellow squash
1 lb white button mushrooms, quartered
1/4 cup olive oil
red wine & sherry vinaigrette dressing (see above)

Slice zucchini and squash in half, then cut each half in slices on a bias.
De-stem mushrooms and half smaller ones/quarter larger ones.
Preheat oven to 350 degrees.
Place vegetables in a baking sheet.
Toss with 1 cup dressing and additional olive oil.
Bake uncovered in preheated oven for 20-25 minutes.
