Citrus Basil Chicken Salad

Remember that leftover Beer Can Chicken I made a couple days ago? Well today I took the remaining chicken and made a Citrus Basil Chicken Salad to enjoy this week. Here’s the recipe:dsc00005-61960322 -3 cups cooked chicken
1/3 cup real mayonnaise
2 tablespoons dijon mustard
1 tablespoon Citrus Basil rub
1 cup sliced red & green grape halves
1/4 cup pecan halves
salt & pepper to taste

Place all ingredients in a bowl & combine.

Chicken, Mayonnaise, Mustard: Dijon, Nuts: Pecans, Salad

    what time should i be over for leftovers?? this meal looks SOOOO GOOD and the citrus basil rub sounds great!

    Oh my gosh — those handpies with the lavendar honey whipped cream look AMAZING! How do you come up with this stuff?!

    That Citris Basil rub sounds very versatile. I’m going to have to keep my eyes peeled for it!

    Katie – you can find dried lavender at a spice store such as The Spice House… or maybe even places like Whole Foods.
