1 can sweetened condensed milk
2 egg yolks
1 tablespoon butter or margarine
1 lb freshly grated coconut
1 teaspoon vanilla extract

Mix all ingredients well.
Cook in heavy saucepan, stirring constantly, until you can see the bottom of the pan.
Pour onto a plate and let cool completely.
Lightly grease the palm of your hands and form small balls.
Roll them in sugar and put in pretty paper cups.

ReplyDeleteBeijinhos are good - and if you like them, you're bound to like brigadeiros (almost chocolate-fudge-like) and then the white version (brigadeiro blanco) and then you can do a half brigadeiro/half b. blanco and it's called casadinho (little marriage), or my friends would call them Pele e Xuxa (Pele the black soccer player, Xuxa being a very white female tv star who were once married to each other).

Oh, and in the middle of beijinhos is usually a clove. It's kind of strong and overpowers a lot of the taste, at least in my opinion. I like the idea of a chocolate chip better!!
