This was a special Tuesdays With Dorie for me because I didn’t make the cake so much for our weekly baking challenge, but for my friend Megan’s birthday which is today! (Megan was recently given a big shout out for her and her husband’s awesome casual fondue dinner they hosted last Friday.) She tried to be slick about not mentioning her birthday but I knew that it definitely couldn’t be ignored. So the Devils Food White Out Cake for this week’s Tuesdays With Dorie is dedicated to Megan.
This cake was pretty easy to make. Dorie’s Devils Food White Cake involves making a chocolate cake with bittersweet chocolate. The 2 cake layers are split and one of the split layers is crumbled and used to coat the outside of the cake.
For the frosting, a hot sugar syrup made on the stovetop is carefully poured into a stand mixer of whipped egg whites. The result is a fluffy meringue frosting with the subtle flavor of marshmallows.
I baked the cake batter in these Pampered Chef torte pans. The pans have a unique design where it creates wells on cake tops, perfect for filling. It definitely made it easier for me to layer and fill the cake! I also opted not to add the crumbled cake crumbs to the top of the cake so that I could showcase the beautiful frosting and it’s delicate swirls and peaks.
