Tropical Fruit Shortcakes

The dessert I wanted to prepare for our Memorial weekend menu needed to be easy, quick and refreshing. I was in the mood to make shortcakes and due to time constraints, this is what I created instead if the traditional shortcakes version. I contemplated even posting this, considering how easy it was to make… but figured I’d share in case someone needs a dessert that is a snap to prepare.

Tropical Fruit Shortcakes

1/4 cup fresh mango chunks
1/4 cup fresh pineapple, diced
1/4 cup sliced fresh strawberries
1 teaspoon sugar
1 cup heavy whipping cream, cold
1 tablespoon powdered sugar
Dessert or sponge cake shells
Fresh mint leaves for garnish

In a bowl, combine the fruit and sprinkle the sugar over them; Toss to combine and set aside.

In another bowl, pour in your cream and add the powdered sugar. Using a hand held mixer, whip the cream until thick and set aside.

Plate your dessert shells in a serving platter. Carefully place the fruit mixture over the sponge cake.

Top the fruit with the homemade whipped cream and garnish with fresh mint leaves.

    Nothing wrong with a short cut (or is that short cake) dessert. These look fabulous and perfect for a Memorial Day celebration. Looks delicious to me!
