Chicken Afritada

Chicken Afritada

2-3 tablespoons cooking oil
1 large head garlic, peeled and minced
1 large onion, chopped
1 whole chicken, cut into serving pieces with the bones intact
1 cup ketchup
1/4 cup soy sauce
1-2 dried bay leaves
salt and pepper to taste
1 red and 1 green bell pepper, seeded and chopped into bite sized pieces

In a wok, add the oil and heat up until hot.
Add the garlic and onion, sauteeing until softened.
Add the chicken, ketchup, soy sauce, bay leaves, salt and pepper. Stir to coat chicken and allow it to cook on medium high heat until chicken is cooked through.
Add the bell peppers and cook until slightly softened.
Serve hot with rice.

* You can also add potatos and carrots, both chopped into bite sized pieces, into this dish to make it even heartier. Add these ingredients to the wok along with the chicken to cook until softened.
