Lechon Kawali (Roasted Pork)

There’s something about pork that runs deep in my cultural roots as a Filipino and one of the best ways to enjoy it is through Lechon Kawali (Roasted Pork). For this recipe, it’s best to use a thick skin-on pork belly with a good amount of meat on the underside. To reduce the amount of fat used, my parents prepared this using a “turbo cooker” which browns and cooks the pork using high heat and no additional fat or oil.

Lechon Kawali (Roasted Pork)

2-3 lbs meaty pork belly
garlic salt and fresh ground pepper to taste

Season the pork belly with the salt and pepper.
Place in a turbo cooker and roast for 1 – 1 1/2 hours until golden and crispy.
Chop in small bitesized pieces and serve hot.
