6 skinless, boneless chicken breast fillets
315g apricot jam
1 tablespoon white wine vinegar
1 tablespoon soft dark brown sugar
Preheat oven to 350 F.
Place the chicken breasts in a 9×13 baking dish. Combine the apricot jam, vinegar and sugar and pour over the chicken. Cover and bake for 40 minutes. Remove cover and bake for a further 10 minutes.
