Australian Shrimp on the Barbie

An Australian dinner menu wouldn't be complete without Shrimp on the Barbie! Due to the heavy usage of our rooftop community gas grills, I had to use the oven instead of grilling these kabobs, but they came out wonderfully and full of flavor.

Australian Shrimp on the Barbie

recipe adapted from Group Recipes

1/2 cup lemon juice
3 large garlic cloves crushed
1 tablespoon minced shallot
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1-1/2 pounds large shrimp unpeeled
Lemon slices

Combine first 5 ingredients in large bowl then mix in shrimp. Marinate at room temperature 1 hour or in the refrigerator 5 hours stirring occasionally.

Prepare barbecue with medium hot coals or preheat your oven to 400 degrees.

Thread shrimp on narrow skewers then grill or bake until just opaque about 2 minutes per side.

Line platter with lemon slices then arrange skewers on platter.
