Creamy Strawberry Mint Popsicles

Whenever I go shopping, I usually have some kind of berry in my shopping cart… sometimes more berries that I really should have for the week. My favorite berry would probably have to be a toss up between strawberries and blueberries. But as much as I love berries, there are times when I have way too many in my fridge and I’m trying to figure out how to use them up so they don’t end up in the garbage.

I was in search of a unique way to use up my strawberries and I found this recipe for Chilled Strawberry Mint Soup. It sounded delicious and refreshing… however in the midst of preparing the recipe, I changed directions and took the recipe to make something else. Instead of a chilled soup, I made these Strawberry Mint Popsicles.

It’s been way too long since I’ve made popsicles so this recipe allowed me to use my molds and pop them in the freezer. The result is a creamy, smooth and very flavorful dessert, great for the summer!

Creamy Strawberry Mint Popsicles
recipe adapted from What’s Cooking America

1 1/2 cups sliced fresh strawberries
3/4 cup sour cream
3/4 cup heavy cream
2 tablespoons orange juice
2 tablespoons honey
1 1/2 teaspoons finely chopped fresh mint leaves

In a food processor, combine all the ingredients and process until smooth. Taste for sweetness and add more honey if needed. Pour the mixture into popsicle molds and freeze until completely frozen.

    yum, I love strawberry popsicles! I haven't made popsicles since I was a little kids. I think I should get a mold now!
