This Week’s Foodie Freebie: Chicago Metallic Roasting Pan

I hope you all had a great, relaxing weekend. I’ve been taking it easy with some kitchen therapy and enjoying the fall views of the city from my window. This past weekend was definitely enjoyable with…

German Wine & Dine – friends came over and we had a wonderful, hearty German feast paired with delicious Riesling wines. Be sure to check out the recipes for the items we had on our menu all this week!

Apple Orchard Trip – friends and I got together yesterday on a perfect Sunday afternoon and enjoyed the country and apple orchard. I’ll be posting about our day soon so be sure to come by and see what fall goodies I came home with!

This week’s foodie freebie is inspired by the heavy use of my oven these days. I’ve been enjoying roasting vegetables, meats and baking where I can… not only because it’s an easy way to cook but for the wonderful aromas that waft through our home from the kitchen. Everyone should have a good roasting pan… even moreso with the upcoming Thanksgiving holiday that just around the corner. So this week, a lucky reader will be receiving a Chicago Metallic Commercial Large Roaster with handles and rack:

    Perfect timing… I need this for Thanksgiving – I usually use the disposable pans. My favorite thing to roast is chicken. It makes a great Sunday dinner and we can use it for leftovers for several meals during the week.

    I love roasting whole chickens. I stuff teh cavity of the bird with a whole onion and a few cloves of garlic. I rub the outside & under the skin with wahtever spices I am in the mood for.

    I live in Phoenix so we don't get a lot of cold weather, but I take advantage when we do by using the oven to roast a whole chicken, turkey and vegetables. In fact, I feel that the best way to eat veggies are to roast them!

    I've been baking and cooking like crazy this fall. I've made lasagna, pumpkin cookies, chocolate chip banana bread, and all kinds of chicken dishes! I'm having my first Thanksgiving in my apartment this year, so I'm going to need a roasting pan!

    i love love love roasting a whole chicken with great herbs and citrus..makes the house smell great and it is a very warm and comforting meal..mmm now i want to roast a chicken..LOL

    Favorite thing? I love my homemade mac and cheese with a bbq turkey layer in the middle. It started out as an experiment when I had too much time on my hands, but is now a family favorite!

    Ohh Joelen, I'm in dire need of a new one. I was window shopping for it this past weekend, too!
    My fave thing to roast is Lechon asado, with extra mojo marinade on the side. Fave thing to bake in the fall is pumpkin bread. Now I'm hungry for all of this…;-(

    Well, I haven't been cooking long enough to say what I like to bake in the fall…but I guess I would say that I would love to make a cobbler in the near future.

    I also enjoyed making a turkey for the first time last Thanksgiving.

    I like to bake pies. I even make my own pumpkin pie filling so the entire pie is from scratch.

    Lately I have been roasting pork shoulder. A very inexpensive cut of meat, but just as tasty.

    I found an amazing recipe for roasted brussel sprouts last year. I never liked the bitterness of brussel sprouts, but this version was out of this world and is a favorite now. I even swayed my mother who also never liked them. :o)

    I love to make the River Cafe slow-roasted chicken with vermouth. It takes four hours to roast at a very low temperature, perfect for cozy autumn weekend cooking.

    I love baking apple pie filling in the bottom of a 9 x 12 with center cut chops on top and stove top stuffing on top of all of that. 🙂 Cover with foil at 375° for 30 mins., foil off for 10 mins. YUM!

    Almost anything, really. My kitchen gets so hot when the oven is on, I save up all the good baking recipes for the fall/winter. I especially like roast chicken, however.

    Mmmm, I love to mix whole small potatoes, quarter onions and garlic cloves all together with olive oil and roast them, so incredibly delicious! Also, roasted sweet potatoes, garlic and rosemary, another favorite!

    Oooohhhhhh I roast so many things in the fall! My favorite of the moment though is 40 clove garlic chicken! I've cooked it at least once a week for the past month. I can't get enough!

    I love to roast acorn squash or sweet potato, and serve it drizzled with a vinaigrette made with olive oil, lime juice, cilantro, and red pepper flakes. It's a surprisingly delicious combination of flavors.

    I also love roasting brussels sprouts. Sprinkle with some pine nuts that have been lightly sauteed with garlic. Add a loaf of crusty bread and a bottle of wine, and that's as romantic a dinner as I can think of.

    roast chicken in a vertical roaster (can also be called roasting chicken on a beer can). Mustard, fresh herbs like thyme and oregano slathered on top and inside. Put on the vertical roaster, 425 degrees until the smoke alarm goes off! (about 50 min to an hour)…

    I think my absolute favorite is an Apple Cake from my Mom's old Betty Crocker cookbook. Basically any fruit/nut cake/muffin/bread with lots of cinnamon…the best!
