Bacon Pizza Bites

I’m all for convenience these days when my schedule is so full and I’ve got a little one to keep me busy. Sometimes meals are just whatever I can scrounge up and it can also encourage some creativity. These Bacon Pizza Bites were the result of throwing together whatever I had on hand since I haven’t had any time to do any groceries lately. Surprisingly, these came out wonderful and reminded me of Bagel Bites, which are mini bagel pizzas. I must say I like these Bacon Pizza Bites better for a few reasons…

Compared to Bagel Bites, there are much tastier, more affordable and a lot more fun to create than throwing frozen bagel discs into the oven. Using packaged biscuit dough, they’re flattened to create the pizza crust and topped with your desired toppings. For these, I used some shredded cheese, crumbed cooked bacon and sliced scallions. You can certainly use whatever you like or have on hand so feel free to let those creative juices flow. These Bacon Pizza Bites (or whatever you decide to top them with) make great appetizers for the holidays, whenever you need a quick snack or have a hankering for pizza!

Biscuit Pizza Bites
recipe adapted from Pillsbury

1 (12oz) can Pillsbury refrigerated biscuits
1/2 cup pasta or pizza sauce
1/4 cup shredded taco cheese
1/4 cup crumbled cooked bacon
1-2 scallions, sliced

Heat oven to 400°F. Lightly grease cookie sheets.
Separate dough into 10 biscuits and flatten out to form a mini pizza crust; place on greased cookie sheets.
Top each mini crust with 1 teaspoon pizza sauce. Top each with desired toppings and cheese.

Bake at 400°F. for 7 to 9 minutes or until cheese is melted and biscuits are golden brown.
