As previously mentioned, this is the year of candy truffles for special friends and family. I've been testing out a few recipes and have come up with quite a few to give as holiday gifts. Some flavors include: Peanut Butter Crunch Truffles, Chocolate Candy Cane Truffles, Snickerdoodle Truffles, and Chocolate Chip Cookie Truffles. The recipes for these will be featured on the site soon but really, they're all just as easy as the recipe below.
These Peppermint Oreo Truffles are a straightforward combination of cream cheese, cookie crumbs and a little extract which are rolled into small balls and dipped into chocolate. No cooking or baking required, unless you count melting the chocolate to dip these truffles into. You could even skip the melted chocolate and roll these in cocoa powder too. I garnished these truffles with colored melted chocolate that I topped them with but it's completely optional.
Peppermint Oreo Truffles

1 pkg. (8 oz.) cream cheese, softened
1 pkg. (1 lb. 2 oz.) chocolate sandwich cookies, finely crushed (about 4-1/4 cups), divided
1/8 teaspoon peppermint extract
1/8 teaspoon peppermint extract
2 pkg. (8 squares each) semi-sweet chocolate, melted
Mix cream cheese, 3 cups cookie crumbs and extract until well blended.
Shape into 48 (1-inch) balls. Dip in melted chocolate; place on waxed paper-covered baking sheet.
Chill 1 hour or until firm. Store in tightly covered container in refrigerator.
I can't believe how easy these are, plus I think I already have all the ingredients. Is the chocolate used for the decoration just colored white chocolate?

ReplyDeleteI LOVE these!! If you are going to make them though make sure the oreo cookie mix is chilled thoroughly before you start dipping in chocolate. I chill mine before I roll them into balls and then re-chill them again before I dip them. Makes them MUCH easier to work with!!
