A week from today is Fat Tuesday, or also known as Mardi Gras. It’s the time of year New Orleans (along with other cities around the world) celebrate with lots of color, music, dancing, singing and of course, food!     Actually, New Orleans isn't really the heartland for Cajun cooking, more for Creole cooking if anything. The capital of Cajun country is really Lafayette – the association of Nola with Cajun culture was manufactured by a bunch of businesses in the latter half of the twentieth century, as very well explained in The Cajuns: Americanization of a People.

    Just a totally non-food-related note from a Cajun who normally comes here for great recipes and not to get all political. . .
