Eggland’s Best Brinner & Giveaway!

If there’s one thing I love, it’s meal planning. I really enjoy putting together meal plans and menus for the week and especially when I entertain. Often times, I look to ethnic cuisines for inspiration on a menu theme. Other times I look towards a specific main dish to help me come up with accompanying dishes to complete the meal. But when Eggland’s reached out to me to host a dinner featuring breakfast foods, I thought it was a genius idea! As a result, I hosted a delicious Eggland’s Best Brinner, breakfast + dinner. It was such a fun theme and a delicious one at that. In fact, the meal plan I came up with for this special brinner is perfect any time of day including for breakfast, lunch and of course, dinner.

When it comes to eggs, one of my favorite egg dishes is eggs benedict. It’s a dish that involves gently poaching eggs, which are traditionally served up on toasted english muffins with Canadian bacon and topped with a rich egg sauce, also known as a Hollandaise sauce. Preparing this involves a lot of eggs so I thought it was the perfect dish to highlight Eggland’s Best eggs for my brinner. To take it a step further, eggs benedict can be served up with different variations. The traditional Canadian bacon can be substituted with other meats such as bacon, sausage, deli ham, turkey, salmon, crab cakes, etc. The possibilities are endless! There are also other condiments and sauces that can be used aside from Hollandaise, including guacamole, sour cream, Mornay sauces, etc.

In the spirit of highlighting eggs, I decided to feature an eggs benedict bar where guests could create their own eggs benedict with assorted meats. Everything was served separately for folks to help themselves. Poached eggs, toasted english muffins, and assortment of deli ham, deli turkey and pork sausage was available for our guests.     We love everything eggs but my absolute favorite is from my childhood. My mom would make us "egg-in-a-hole" all the time. It's basically a peice of bread with a hole cut in the middle and the egg is fried in the middle over easy.

    I'd have to agree with you- eggs benedict (in traditional form) are my favorite, followed closely by a california style omelet. Just stumbled on your blog tonight!

    My favorite way to eat eggs are soft scrambled with american cheese. Creamy and yummy! Ironically, I like fried eggs without the yolk.

    I love my eggs cooked over-easy with melted cheese on top. Turn that into a breakfast sandwich with bacon on a bagel or english muffin and it's even better!

    My Dad's omelets…Sunday night as I was growing up he always made omelets for dinner. Still my fav omelets….green pepper, onions, cheddar and tomato's, with a side of cinnamon toast! He's coming to visit this week-think I'm going to have to have him make us some!Yummy!!!!!!!!

    Well, I just like eggs. Soft scrambled. A bit of cheese or not? Deviled. Quiche?

    Soft scrambled is likely the simple favorite.

    Mine's a childhood favorite too – the open-face egg sandwich. Lightly toasted bread, sliced hard boiled egg, Boston lettuce, sliced tomato with kosher salt, eaten with a knife and fork.

    I'm another eggs benedict fan. My favorite version came from a restaurant in Gulf Shores, AL. It included filet and an espagnole-based sauce as well as the poached egg and hollandaise. It's obviously a very rich variant. I've recreated it for my husband as it's his favorite, too.

    I can't decide! I love eggs so much, especially veggie omelets, and scrambled with laughing cow cheese and veggies. Also just love them hard boiled! Thanks for you wonderful blog…I just stumbled upon it and I can't wait to try out a lot of the recipes!

    When I was a kid, we always had what we called "dippy eggs" (because we dipped our toast in the yokes) every Sunday morning. Eggs over easy are still my favorite!

    HMMMM… favorite way to serve eggs…

    i have a Croque Madame Sandwich I make, Open faced, make French toast as the bread, rolled ham and topped with a fried egg and of course some Hollandaise sauce.

    OR

    A bread pudding … let's say a savory eggy oniony bread pudding!

    I love eggs any way! Breakfast, lunch or dinner. When I was pregnant I ate them twice a day. Scrambled with kielbasa or an omlet with bacon and avocado are some of my favorites!

    scrambled with pickled hot banana rings. with ketchup, horseradish and frank's hot sauce. it doesnt look very pretty, but is quite yummy.

    Love Brinner! My favorite way to eat eggs is over easy (or as we like to call them, dippy eggs!) with wheat toast to dip in the yolk. Yum!

    My favorite way to have eggs is two ways – weekdays it's scrambled with a slice of american cheese on an toasted english muffin. On the weekends it's as an omlet with cheese and ham!

    I am so excited about this giveaway. I ONLY buy Eggland's Best Eggs. Let's just say after an incident with chicken poop I began to really appreciate the fact that they inspect every egg…

    Oh how I love eggs. I love them in quiche. I love them over hard with Parmesan cheese sprinkled on top. I love them as an ingredient in French pastry cream. I love them deviled at BBQs. I love them hard boiled and chopped up in egg salad. I love them baked in ramekins with a touch of heavy cream and sprinkled with herbs and cheese.

    I can't pick one favorite egg recipe. I'm sorry.

    My favorite egg dish: scrambled with whipped cream cheese and lots of chopped herbs. Made in the microwave, in a cup sprayed with non-stick spray. Easy to take and eat at work.
