This coming weekend I’m excited to go blueberry picking! Joel will be beyond delighted to play and eat his way through a blueberry field (I’m anxious to see the look on his face when he realizes he is surrounded by his beloved “blue beh behs”!) . My niece, who is spending part of her summer vacation with me, will have a chance doing something fun and new. So as I’m anticipating bringing home a lot of blueberries to play with in the kitchen, I need to get some recipes ready to use them in. If you are planning on taking advantage of blueberry season this year or you score some great sales on blueberries at the store, here are some 10 recipes I’ve made in the past that are Bursting with Blueberries!
Berry Topped Pudding Tarts
Delicate puff pastry shells are baked and filled with a velvety smooth
vanilla bean pudding, then topped with mixed berries.
Blueberry Buttermilk Pancakes
Fluffy and studded with blueberries, this is a delicious way to start the day
Banana Berry Muffins
Fresh strawberries, blueberries and bananas are baked into a sweet,
cake like muffin batter that’s topped off with a cinnamon sugar topping.
Streusel Topped Blueberry Muffins
A homemade blueberry filling is swirled into the batter in addition to the blueberries already added in.
Blueberry Hand Pies
These flaky pockets of blueberry goodness have just a slight hint of lemon,
thanks to a bit of lemon zest tossed in with the fresh blueberry filling
Blueberry Cheesecake Cups
Using a combination of mascarpone cheese and cream cheese, sugar, lemon juice and zest,
vanilla, eggs and just a touch of flour, the cheesecake filling comes out creamy and light.
Blueberry Cream Scones
When enjoyed fresh out of the oven, these blueberry studded and
creamy scones make it easier to take time out for breakfast!
Fresh Berry Fools
Macerated strawberries and blueberries are layered in a serving dish
with a creamy, fruity, whipped cloud of deliciousness…
I loved the fruity mix of blueberries, raspberries and strawberries…
and the only way to make this pie better was having it a la mode!…
these will make breakfast a meal to look forward to…
