TGIF! Fridays are always a good reason to celebrate… because it’s the weekend! Hope you have some fun and delicious weekend plans in your corner of the world. It’s a busy one for me, as usual. Joel will be spending time with his dad for Father’s Day weekend while I’ll be working in the kitchen once again. This time, I’m teaching a gluten free living class and hosting a Spanish Tapas Cooking Party. If you’re in the area, sign up and join us or follow along with via our Facebook page and Instagram! Then there’s all the family get togethers for Father’s Day on Sunday. Since there’s so much to celebrate this weekend, it seems only fitting to share an easy oldie, but goodie… Celebration Rice Krispie Treats. The classic favorite of rice crispie treats gets a colorful splash of sprinkles for a festive look…

There really is nothing earth shattering about this recipe. There probably isn’t even in need of sharing a recipe because it’s just that easy. But even though its one of those things everyone may have heard of, rice crispie treats most likely will get you to smile. I loved making these with Joel and I think I even channeled The Baron’s inner child when I saw him grab one [or two, maybe even three] the day I made these. But recipe aside, just the fact of making these for my boys and them helping me out in the kitchen is reason enough to smile. Hope you have a wonderul Father’s Day weekend with loved ones and remembering those paternal loved ones that have passed on too. ๐Ÿ™‚

Celebration Rice Krispie Treats
recipe adapted from Kellogg’s

3 tablespoons butter
1 10oz package of mini marshmallows
6 cups crisp rice cereal
2 tablespoons color sprinkles

In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
Add cereal and stir until well coated.

Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray.

Top with sprinkles liberally and cool. Cut into 2-inch squares. Best if served the same day.

MICROWAVE DIRECTIONS:

In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 and 3 above. Microwave cooking times may vary.

I love the sprinkles on top. We just made some of these and usually put colored sugar on top of them.. Next month, when we make them, we'll have them with these kind of sprinkles.

My favorite way to make these is with cheerios instead of rice krispies and peanut butter added… yum yum yum!
