We had a handful of Joel's friend attend our luau so I wanted to make sure to include dishes they would enjoy. Every kid I know is familiar with pizza so as a twist, these flatbreads made it on the menu. The ever popular 'Hawaiian pizza' takes Canadian bacon and diced pineapple as a topping on a pizza crust. Drawing inspiration on that, I used a {gluten laden} flatbread and topped it with same, with the exception of a pineapple salsa instead. It turned out great and they were popular with the kids and adults alike.
Hawaiian Flatbread

1 package Flatout Flatbread or 6 flatbread
3/4 cup pizza sauce
1 1/2 cups shredded mozzarella cheese
1/4 cup diced Canadian bacon
1/4 cup prepared pineapple salsa {recipe below}
Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.
Place flatbread on prepared baking sheet. Divide pizza sauce among the flatbread, spreading a thin layer on each.
Top each flatbread with shredded cheese, followed by Canadian bacon and salsa.
Bake flatbread in preheated oven for 10-12 minutes until cheese is melted and bottoms are crisp.

Remove from oven and cut into pieces before serving.
Pineapple Salsa:
2 cups finely diced pineapple
1 jalapeno, seeded and minced
1/2 cup red onion, minced
1/4 cup fresh cilantro, minced
juice of 1 lime
salt and pepper to taste
For the salsa, combine all the ingredients in a bowl.
