My boys and I love to make dinner together and we recently had a flatbread night. Joel made his ultimate pepperoni flatbread (recipe to come!) while I made this Grilled Chicken Flatbread. It's one of my favorite appetizers at Olive Garden and I figured it would be easy enough to try making it at home... and you can too! Using your favorite homemade or storebought pizza dough, it's just a matter of adding a few ingredients to recreate at home. So here's to an easy restaurant dish you can make yourself at home...
Grilled Chicken Flatbread

cooking spray
2 tablespoons olive oil
1 ball of your favorite pizza dough (homemade or store bought)
1/4 cup roasted garlic
1/2 cup alfredo sauce (homemade or store bought)
1/2 cup grilled chicken, diced
1/4 cup sliced roasted red pepper
2 cups shredded mozzarella cheese
grated parmesan cheese for garnish
fresh basil for garnish
olive oil for garnish (optional)
Use vegetable oil pan spray to lightly grease a large baking sheet and drizzle olive oil into the bottom of the pan(s). Preheat the oven to 400 degree oven.
Place the dough in the prepared pan and press it over the bottom of the pan, stretching it towards the edges ad corners of the pan.
Place the roasted garlic into a small bowl and mash with a fork to form a paste. Spread the garlic paste over the dough.
Spread the alfredo sauce over the top and scatter the chicken and roasted bell peppers. Sprinkle mozzarella cheese over the top.
Bake in the preheated oven for 15-20 minutes or until crust is golden brown and cheese is slighty toasted.
Garnish with grated Parmesan cheese and fresh basil and a drizzle of olive oil (if desired).
