Instant Pot: Cinco de Mayo Must Haves!

Cinco de Mayo is just around the corner – what delicious way will you be celebrating with? If you’re looking for some Mexican inspired fare to prepare for the fiesta, I got you covered! Here are some of my favorite dishes perfect for the Cinco de Mayo celebration….

Instant Pot Cilantro Lime Chicken Tacos

It’s everything I love about chicken enchiladas all in a bowl! Boneless, skinless chicken breast slowly simmers in a soup of enchilada sauce, chicken broth and milk. Joining in the mix are kidney beans, tomatoes, sweet corn, onions and bell pepper. This is a hearty soup of a Mexican favorite dish!
