Instant Pot: Our Favorite Mexican Recipes!

We love our share of Mexican inspired dishes and the Instant Pot has allowed us to get a taste of the border! There's a lot of variety in Mexican cuisine so branch out from the usual tacos. We had this Caldo Res (Mexican Beef Soup) which was a hearty bowl full of vegetables and the broth itself was so nourishing!

The recipe involves pressure cooking a pork roast with water, cumin, brown sugar, salsa and a bottle of cola. It seems like an odd combination but it definitely does bring out a nice sweet and spicy flavor!

I let my Instant Pot do all the work of gently pressure cooking pork 
with the flavors of tangy fresh lime and smoky chipotle peppers. 

Instant Pot: Chicken Enchilada Soup

It's everything I love about chicken enchiladas all in a bowl! Boneless, skinless chicken breast slowly simmers in a soup of enchilada sauce, chicken broth and milk.

In honor of Cinco de Mayo, this Arroz con Pollo is the perfect one pot dish & nice 
change of pace from the usual Tex Mex fare. Comforting, flavorful and delicious - olé!

Make fish fun with some Old Bay Fish Tacos! This version uses the 
IP's steam function and steams the fish to lock in all that flavor.

Tamales got me like whoa! The IP did an awesome job pressure cooking my pork filling & steaming these Cilantro Pork Tamales in a fraction of the time. Have yourself a tamale party and stock up!

Make dinnertime a fiesta! This Instant Pot Chicken Enchiladas with Red Chili Sauce are flavorful, aromatic and so easy to make. The whole family will be shouting, "Olé!" in no time!
