ABC Pasta Salad

With back-to-school right around the corner, I’m slightly stressed with everything needed to do to get my family ready. From school supplies, new clothes and shoes, proper outerwear for the coming fall and winter, and ensuring we have balance with all our scheduled, it’s a lot! Anyone else feel the same way? Thankfully, school lunches aren’t too much to stress about. Here’s a recipe that’s quick to prep, easy to pack and will save some money too…

This ABC Pasta Salad is perfect for school lunches. ABC = Apples, Broccoli & Cheddar makes this a colorful and nutritious meal for the kids (and adults too.) You can make this in advance so the ranch flavor can meld a bit with the ingredients or if you’re like my husband, he likes his dressing on the side so he can add it just before enjoying.

ABC Pasta Salad

ingredients:

  • 4 oz alphabet pasta
  • 4 cups small broccoli florets
  • 1/4 cup light ranch dressing
  • 1 small apple, cored & diced
  • 1/2 cup shredded reduced-fat mild cheddar cheese
  • 1 tablespoon finely chopped fresh chives

instructions:

  1. In large pot of boiling water, cook pasta according to package directions, adding broccoli in the last 3 minutes of cooking. Rinse with cold water; drain.
  2. Toss together pasta, broccoli and dressing. Stir in apple, Cheddar and chives. 
  3. Tip: Add chopped almonds and raisins for added texture!
