Pineapple Sorbet

One of my favorite fruits of the summer (and all year around) is pineapple. I love the sweet and slightly tart flavor, in addition to it’s versatility. With an abundance of pineapple available during the summer months, I made this refreshing and easy 3 ingredient recipe for Pineapple Sorbet! Aside from the ease, there’s no need for any fancy ice cream maker. If anything, you’ll just need some patience to enjoy this summer treat to allow for it to freeze overnight…

Pineapple Sorbet

Serves: 4

Prep Time: 10 min

Cook Time: 20 min

Chill Time: 6-12 hours

Ingredients

2 cups pineapple, cleaned and diced (your choice of favorite fruit will also work nicely!) 
3 cups water
1 cup granulated sugar 

Instructions

  1. Clean and cut fruit

  2. In a medium saucepan, bring water and sugar just to a boil over medium-high heat

  3. Stir until sugar is dissolved to make simple syrup; Remove from heat and cool.

  4. Stir simple syrup together with fruit.

  5. Process in blender or food processor in small batches; Blend until completely smooth

  6. Pour mixture into pan, cover and cool completely; Freeze overnight. Store leftovers in freezer for up to 2 weeks.
