Anyone else purposely make more turkey than needed just for the leftovers? In our house, it's a must to have enough turkey leftovers for sandwiches the next day. My husband is a fan of the traditional turkey sandwich but for a twist, how about making turkey salad?
This is delicious the next day served on your choice of bread (croissants are a family favorite too). You can easily substitute the turkey for chicken - it works for both!
[Leftover] Turkey Salad

Prep Time: 10 min
Chill Time: 1 hour
INGREDIENTS
4 cups turkey, cooked and diced1 cup seedless red grapes, cut in half or quartered
1 cup red apple, diced, optional
2 celery ribs (1 cup), chopped
1 cup pecans, walnuts or almonds, chopped or sliced
1 cup mayonnaise
Juice of 1 lemon (about 2 tablespoons)
1 tablespoon fresh parsley, chopped
1 teaspoon kosher salt
Freshly ground pepper to taste
For Serving - choice of bread, lettuce & condiments
INSTRUCTIONS
Cut turkey breast and add to large bowl.
Cut grapes, apple, celery and pecans, add to bowl.
Add mayonnaise, lemon juice, parsley, salt and pepper in a small bowl.
Stir mayonnaise mixture together until well combined.
Add mayonnaise mixture to bowl with turkey and combine until fully incorporated. Cover and refrigerate at least one hour before serving.
Serve on bread or croissants with lettuce, or whatever you prefer. Store leftovers in airtight container in refrigerator.
