Pecan Pie Brownies

What are your dessert plans this Thanksgiving? For us, it will be the usual pies. However, I do plan on making some treats I’ll drop off for family and friends to enjoy. My son and I had a fun conversation on mashing up foods (2 desserts made into 1). From our conversation, my son suggested a mash up of brownies and pecan pie… so here we are!


This recipe for Pecan Pie Brownies uses a regular box of brownie mix which is prepared as directed on the box and baked for half the time. While that’s baking, a pecan pie filling is made on the stovetop and then poured over the half-baked brownie and finished off in the oven. It’s really easy and pretty decadent… so have some milk or coffee on hand to enjoy it with!

Pecan Pie Brownies


PRINTABLE RECIPE


INGREDIENTS

1 box brownie mix (must make in a 13×9 pan) 

Pecan Pie Filling: 

1 cup sugar 
1 ½ cups light corn syrup 
4 eggs 

1/4 cup butter
1 1/2 teaspoons vanilla extract
2 cups roughly chopped pecans


INSTRUCTIONS

1. Preheat over according to the instructions on brownie package. 


2. Mix brownies according to package instructions 

3. Pour the brownie batter into a greased 13×9 inch pan and place in the oven to bake for 15-18 min, which is HALF the recommend time on the box. [If you cook them for the full time the brownies will burn].

4. When the brownies have finished pre-baking remove them from oven and set aside.

Pecan Pie Filling
1. Gather all the filling ingredients. 

2. Whisk together the sugar, corn syrup, eggs, butter and vanilla in a small or medium saucepan.  Place on the stove over medium heat, stirring continuously. 

3. The filling should have become thick enough to coat your spoon (around 15 min or so). Stir the pecans into the mixture and continue to cook for 2-3 minutes or until the mixture reaches the consistency of runny oatmeal.  

4. Transfer the filling over the top of the half baked brownies,
spreading it out evenly to completely cover the brownies. 


5. Place them back in the over for an additional 25-30 min.  The filling should only slightly giggle in the middle of the pan when done. 

6. Cool completely before cutting.
