Cranberry Pistachio Cookies

Red and green are popular colors during the holidays, so it’s no surprise I’m incorporating them into some holiday cookies. Cranberries and pistachios are a perfect combination for holiday colors and flavors, especially in these Cranberry Pistachio Cookies. Starting out with a basic cookie dough, the addition of dried cranberries and pistachios bring out the holiday spirit and make a great cookie for gift giving!

Cranberry Pistachio Cookies

PRINTABLE RECIPE

Makes: 36 cookies

Prep Time: 5 min

Cook Time: 8-10 min 

Ingredients

1 cup unsalted butter, softened

⅔ cup granulated sugar

½ teaspoon salt

1 large egg, room temperature

1 tablespoon vanilla extract

2 cups all-purpose flour

½ cup chopped dried cranberries

½ cup chopped pistachios 

2-3 blocks white almond bark or 1 cup white chocolate chips 

Instructions

In a large bowl, beat the butter until fluffy. Add sugar and salt and beat until well combined and fluffy.

Beat in the egg and vanilla until well combined. Gradually add the flour and beat until well combined

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or silicone mat

Add cranberries and pistachios to basic cookie dough and mix well. Roll into balls and place on prepared baking sheet

Bake for 8-10 or until edge are set and slightly golden brown. Remove to wire rack and cool completely

Melt chocolate in microwave safe bowl; Drizzle cookies with chocolate. Let set for 5-10 minutes to harden. Store in airtight container.
