Air Fryer Zucchini Coins

It’s the start of the new year and I’m trying to eat more veggies. I’m sure I’m not the only one, given the recent holidays! Thankfully my air fryer is helping me a bit by preparing vegetables in a healthier way compared to deep frying. It’s baby steps and some vegetables is better than none at all! These air fryer zucchini coins were an amazing way to get my tween to eat zucchini for the first time… and liked it!

Air Fryer Zucchini Chips

PRINTABLE RECIPE

Serves 4

Prep Time: 10 minutes

Cook Time: 6-8 minutes

 

INGREDIENTS 

2-3 small zucchini, sliced thinly, about ⅛ – ¼  thick

½ cup all-purpose flour

2 teaspoons paprika

½ teaspoon salt

¼ teaspoon pepper

1½ cups (from 8 oz box) panko breadcrumbs OR crushed pork rinds

¼ cup finely grated parmesan cheese

2 eggs, beaten

 

INSTRUCTIONS 

Slice the zucchini into ⅛ – ¼ inch thick chips, using a mandolin slicer gives you uniform thickness and allows even cooking.

In three separate bowls add…

Bowl 1 – Flour, salt & pepper, and paprika. Mix together

Bowl 2 – Eggs, beaten

Bowl 3 – Breadcrumbs or crushed pork rinds and parmesan cheese

Preheat air fryer at 400F for 5 minutes

Dip the zucchini in the flour mixture, then egg, and then the breadcrumbs or crushed pork rinds and place on a baking rack.

Add a single layer of breaded zucchini chips in the bottom of the air fryer basket, spray with vegetable oil.

Fry at 400F for 6-8 minutes, flip at 4 minutes .

Cook until chips are browned and crispy

Add any additional salt or pepper to taste

Serve immediately. Store leftovers in refrigerator in airtight container.
