Air Fryer Zucchini Coins

It's the start of the new year and I'm trying to eat more veggies. I'm sure I'm not the only one, given the recent holidays! Thankfully my air fryer is helping me a bit by preparing vegetables in a healthier way compared to deep frying. It's baby steps and some vegetables is better than none at all! These air fryer zucchini coins were an amazing way to get my tween to eat zucchini for the first time... and liked it!

1½ cups (from 8 oz box) panko breadcrumbs OR crushed pork rinds
