Burger Bowls

A few years back, the popularity of ‘bowls’ could be found at many restaurants. Burrito bowls, sushi bowls, smoothie bowls… you could serve up pretty much anything in a bowl form! That said, I’ve been making some bowls myself to cut out carbs and help me eat more veggies. Recently I made these Paleo Burger Bowls which has all the best parts of a burger between the bun. It’s low carb and Whole30 friendly, where I’ve also included Whole30 ingredients as well. Feel free to substitute ingredients to your preference!

Paleo Burger Bowls

(Low Carb/Whole 30 Friendly)

PRINTABLE RECIPE

Prep Time 10 minutes

Cook Time 15 minutes

Total Time 25 minutes

Servings 4

INGREDIENTS

For The Bowls:

1 pound ground beef

1 teaspoon garlic powder

1 teaspoon dried dill

2 small heads romaine, washed and chopped

1 1/2 cups halved cherry tomatoes

1/2 cup pickles

1 cup red onion, thinly sliced

8 slices of bacon

2 avocados peeled, pitted and sliced

For The Sauce:

1/2 cup avocado mayo

2 tablespoons paleo ketchup

1 tablespoon coconut aminos if on Whole30, see note for details

1 tablespoon pickle relish

2 teaspoon fruit juice (or maple syrup/honey if not Whole30)

2 teaspoons of minced onion

1 teaspoon of crushed red pepper

½ teaspoon coarse salt

Whole 30 Sauce Version

1/2 cup Whole 30 approved mayo

2 tablespoons Whole 30 approved ketchup

1 tablespoon pickle relish

2 teaspoon maple syrup or honey

2 teaspoons of minced onion

1 teaspoon of crushed red pepper

½ teaspoon coarse salt

INSTRUCTIONS

Heat oil in a large skillet over medium heat, then add beef and cook until brown and crumbled. Stir in garlic powder and dill. Remove from heat.

Cook bacon and set aside to cook.

Prep avocado, tomatoes, lettuce, pickles and onions for the bowls. Crumble the cooled bacon strips.

Prepare the sauce by mixing all ingredients together until well combined. Set aside.

To assemble the bowls, start with a layer of the chopped romaine, topped with about 1/4 of the ground beef mixture. Add remaining pickles, bacon, tomatoes, onion and sliced avocado around the beef.  Top with prepared sauce and serve.
