- Eight cloves of garlic (minced)
- Two pounds of halved baby potatoes
- Two tablespoons of extra virgin olive oil
- 1.5 tsp. salt
- 1 tsp. finely minced fresh rosemary
- Half a teaspoon of ground black pepper
- Chopped parsley (for garnishing)
- Around two tablespoons of fresh lemon juice (optional)
Instructions
- Preheat the oven to 400F.
- Take a large baking sheet and line it with parchment paper. Set the dish aside.
- Take a mixing bowl of medium size and add the potatoes to it. Then, drizzle them with two tablespoons of high-quality olive oil.
- Next, you must add the pepper, salt, rosemary, and garlic. Mix all of these ingredients well to combine.
- Transfer all the potatoes to the baking sheet and let them bake for at least forty-five minutes or a maximum of an hour. Make sure that you stir the potatoes occasionally.
- Once the potatoes are crisp, remove them from the oven, sprinkle the parsley, and drizzle it with lemon juice if that is what you want.
- Serve it to your guests or enjoy these delicious potatoes with your lunch or dinner.
